Follow Up: What We’re Eating This Week

Queso Taco Pasta Bake - Good but not as cheesy/creamy as you might expect.

Poached Eggs and Salsa Over Cheesy Grits - I’m a firm believer that you can put an egg on top of anything and it’d be good.

I know, I know. We didn’t get to the best-looking recipes. You win some, you lose some.

Follow Up: What We’re Eating This Week

We did a shockingly good job of sticking to last week’s plan but I don’t have anything particularly interesting to say about any of the recipes. 

Except the Spicy Avocado Chicken Enchiladas, which were LIPSONFIRESPICY. 

And I like spicy food.

Consider yourself warned.

What We’re Eating This Week

So help me if I eat any more takeout, I WILL finish unpacking the kitchen tonight.

Monday: Spicy Avocado Chicken Enchiladas

Tuesday: shrimp etouffee

Wednesday: breakfast for dinner

Thursday: Chicken Piccata (although, really, LIGHT butter?)

Friday: fridge cleaner pizza

Follow Up: What We’re Eating This Week

Chicken with Pepperoni Marinara Sauce - Adding pepperoni to plain ol’ marinara sauce is a GAME CHANGER.

Tortellini w/ kale, mushrooms & chicken sausage - I know I’m super late to the game but damn, kale is good.

Mustard and Garlic Spatchcocked Chicken - In between mouthfuls of food I kept saying how good this was.
