Recipe 34 of 2013: Linguine with Roasted Broccoli, Pine Nuts and Goat Cheese

I once heard that pine nuts can fuck with your taste buds so I left them out but otherwise this recipe included three of my favorite things: pasta, broccoli and goat cheese. Win.

In case you haven’t eaten ramen noodles since college, they’re still awesome. Lili liked this soup so much she bathed herself in it - it’s that good.

Decided to pass on making the green sauce since it’s officially pico season in this house (and also because it looked gross). Dare I say these were too creamy? Not bad but could be better with some modifications.

Step one: Make the super smart decision to wait until rush hour to go to Target. Sit in traffic.

Step two: Find out Target only has one of the two kinds of ink needed.

Step three: Sit in even more traffic to go to Office Depot.

Step four: Realize Office Depot sells dual ink packs and that this whole problem could’ve been avoided.

Step five: Come home only to find out you bought the wrong kind of ink entirely.

So there's that.

Minus a hiccup with the moving truck (Budget can eat a bag of dicks), we made it to NOLA in one piece. Upon our arrival we promptly bought a car and are currently in the process of renting an apartment. Adulting FTW.
Car #2 is a hand-me-down minivan from my grandparents. It’s about as glamorous as it sounds but it does the trick.
We’ve cooked approximately two meals at home since we’ve gotten here and I’m afraid the credit card may spontaneously combust as a result. Remedying that with Vietnamese Chicken Noodle Soup for lunch and something, anything homemade for dinner - suggestions welcome.

I don't want to jinx anything BUT...

Smile Friday: Two weeks ago tomorrow, I was chilling in Princeton with three of my very favorite ladies, Sarah, Laura, and Casey. I didn’t talk about it much because the marathon bombings happened right afterwards, but we had a pretty fantastic weekend with Casey in town. I’d sorta like it if she came back now.

Sads Friday: Sarah is moving to NOLA like BASICALLY TOMORROW and although it’s gonna be great to visit her and her husband and puppy, I’m gonna miss having her a quick train ride away. But hooray for new beginnings and big moves! GO SARAH!
