Follow Up: What We’re Eating This Week

We did a shit job of sticking to last week’s menu but since I’m sure you’ve been anxiously awaiting the recap, here it is:

Coconut Chicken w/ Apricot Sauce - Pretty good but I was too busy shoveling Roasted Broccoli down my gullet to care.

Spinach & Artichoke Pasta - Eh. Wouldn’t make again.

Scallion Meatballs w/ Soy-Ginger Glaze - Powdered ginger packs a helluva lot more punch than you might imagine. Use sparingly.
