Monday: Roasted Garlic + Caramelized Veggie Tostadas
Tuesday: Coconut Chicken w/ Apricot Sauce
Wednesday: Spinach & Artichoke Pasta
Thursday: Scallion Meatballs w/ Soy-Ginger Glaze
Friday: Crispy Baked Fish Nuggets
Saturday: Trinidadian Chicken Curry
Veggies: Roasted Broccoli, Parmesan Roasted Potatoes, Roasted Green Beans w/ Mushrooms, Balsamic and Parmesan (roast all the things!) and Cauliflower and Brussels Sprouts Gratin (just because I’m eating veggies doesn’t mean they’re going to be healthy)
