Beer battered fish tostadas (loosely based on this) - You really can’t go wrong with fried shit on top of more fried shit.
Beef with Broccoli - And so my love affair with broccoli continues.
Crawfish Monica - I couldn’t find crawfish anywhere in this godforsaken town so I made gumbo instead.
Veggie stir fry - Decided to use leftover rice from the gumbo to make fried rice instead....

Follow Up: What We're Eating This Week
Jalapeno Popper Mac N’ Cheese - Would definitely make some changes but this was pretty solid.
Oven “Fried” Pickles - Eh. Not surprisingly, fried is better.
Sausage Ragu over Creamy Polenta - Heavy but good.
Pasta with Sausage, Basil and Mustard - I want to eat this every day for the rest of my life.
